RED VELVET CAKE

250 grams of flour

400 grams of sugar

1 teaspoon of baking soda, baking powder and salt

2 TABLESPOONS of cocoa powder (unsweetened)

2 Eggs room temp

1 cup of oil

½ cup strong black coffee

1 cup full fat buttermilk room temp (if you can’t find full fat low fats fine)

1 teaspoon white vinegar  

3 oz red food dye

Combine flour, salt, baking soda and baking powder in a bowl.

In a separate bowl or a stand mixer combine oil, and sugar, mix until combined. Add in two eggs buttermilk and red food coloring and mix until combined.

Add cocoa to the warm coffee mix together then add coffee and cocoa mixture to the bowl, lastly add the teaspoon of vinegar.

Now add some of the dry mixture to the wet ingredients mixing it in slowly.

This is a VERY VERY thin batter so don’t worry if it looks thin.

Divide the batter evenly between three baking rounds that have been generously greased and floured.

Preheat the oven to 325 degrees and bake for 25 to 40 mins. I know this seems like a huge range but when I bake at home it takes 35 mins but in my commercial ovens at the shop it took 20. Start checking at 20 mins.

A toothpick should come out with a few moist crumbs and the center will be set and not jiggly .
